Mini Pistachio Cupcakes
To start off my blog, I'll post about these cute mini pistachio cupcakes. I got the recipe from tablespoon.com. I'll post the link below. First of all, not too many ingredients, which I like. (I'm so lazy!) Second, super yummy.
This was my first time making mini cupcakes, I usually make regular size ones, so I didn't know how much to put in. I'd say between 2/3 & 3/4 full would be perfect.
The batter was a bit runny at first, but it thickened up because of the pudding mix.
My mini muffin tin holds 24 cakes, and I had to use it 3.5 times! I'm definitely gonna get another pan~
After was the frosting. The recipe says to use 1/3 cup of sugar, but I only used 1/4. I like to use this piping bag to make it neat. If you tie the bottom right before the opening with a clothespin or something before you fill it, you can prevent a huge mess.
